**Outputs:**

#### Concentrate required

**Key:** mass_a

**Expr:** batch * (target - brix_b) / (brix_a - brix_b)

**Format:** number

**Primary:** true

**Description:** Kilograms, by mass, not volume.

#### Diluent required

**Key:** mass_b

**Expr:** batch - mass_a

**Format:** number

**Primary:** true

#### Soluble solids in batch

**Key:** solids

**Expr:** batch * target / 100

**Chart:**

#### Concentrate required vs target Brix

**Type:** line

**X:** target

**From:** 5

**To:** 30

**Steps:** 26

**Series:**

**Disclaimer:** Brix is mass percent sucrose equivalent, so the blend is by mass. Convert to volume with density at the filling temperature. Measure final Brix with a calibrated refractometer or density meter and correct for temperature.

## Content

**Intro:** Hitting Brix on the first mix saves rework and giveaway. This calculator uses the Pearson square, a simple mass balance, to size concentrate and diluent for any batch.

**Sections:**

#### How to use it

**Body:** Enter the batch mass you want to make, the target Brix, the Brix of your concentrate and the Brix of the diluent. The tool returns concentrate and diluent masses and the soluble solids contained. Use mass throughout; weigh ingredients on load cells rather than metering by volume, because syrup density changes with Brix and temperature.

**Bullets:**

- Target must sit between the two input Brix values
- Add other ingredients after the base blend
- Verify with a refractometer after mixing

#### Pearson square formula

**Body:** The mass of concentrate equals batch times (target minus diluent Brix) divided by (concentrate Brix minus diluent Brix). Diluent is the remainder. This is the same as the Pearson square diagonal subtraction taught in food technology. It conserves soluble solids: concentrate mass times its Brix plus diluent mass times its Brix equals batch mass times target Brix.

#### Example and mistakes

**Body:** For 5,000 kg at 11.5 Brix from 65 Brix syrup and water, concentrate is 5,000 times 11.5 divided by 65, about 885 kg, and water is about 4,115 kg. Common mistakes are blending by volume, ignoring that acid, flavor and juice solids also read as Brix, and measuring Brix on a hot sample without temperature correction.

**Cta:** Recipes, batch sizes and tank yields live in your ERP. Netray can help surface them read-only for planners and operators.

**Faq:**

#### Is Brix measured by weight or volume?

**Answer:** Brix is grams of sucrose equivalent per 100 grams of solution, so it is a mass percentage. That is why blending should be done by mass.

#### Can I blend two syrups instead of water?

**Answer:** Yes. Enter the second syrup Brix as the diluent Brix. The target must lie between the two values.

#### Does temperature matter?

**Answer:** Yes. Refractive index changes with temperature, so refractometers apply a correction. Read samples at the instrument's reference temperature, typically 20 C.

#### How do I convert kilograms to liters?

**Answer:** Divide mass by the density of the blend at the filling temperature. Density rises with Brix, for example around 1.046 kg per liter at 11.5 Brix at 20 C.
