## Tool

**Kind:** calculator

**Inputs:**

#### Hold temperature at cold spot

**Key:** temp

**Type:** number

**Default:** 121.1

**Min:** 90

**Max:** 140

**Step:** 0.1

**Unit:** C

**Help:** Slowest-heating point temperature, not retort temperature.

#### Hold time at that temperature

**Key:** time

**Type:** number

**Default:** 12

**Min:** 0

**Step:** 0.5

**Unit:** min

#### z-value

**Key:** z

**Type:** number

**Default:** 10

**Min:** 1

**Step:** 0.5

**Unit:** C

**Help:** 10 C is the conventional value for Clostridium botulinum spores.

#### Required F0

**Key:** required

**Type:** number

**Default:** 3

**Min:** 0

**Step:** 0.1

**Unit:** min

**Help:** Set by your process authority. 3 min is a common minimum botulinum cook.

**Outputs:**

#### Lethal rate

**Key:** rate

**Expr:** pow(10, (temp - 121.1) / z)

**Format:** decimal

**Description:** Minutes at 121.1 C equivalent per minute at this temperature.

#### Delivered F0

**Key:** f0

**Expr:** time * rate

**Format:** decimal

**Primary:** true

**Description:** Equivalent minutes at 121.1 C.

#### Margin over required F0

**Key:** margin

**Expr:** f0 - required

**Format:** decimal

**Description:** Negative means the process is under-processed.

#### Hold time needed for required F0

**Key:** needed_time

**Expr:** required / rate

**Format:** minutes

**Primary:** true

**Chart:**

#### Delivered F0 vs hold temperature

**Type:** line

**X:** temp

**From:** 105

**To:** 130

**Steps:** 26

**Series:**

- f0

**Disclaimer:** Simplified single-point calculation. Real process schedules need a heat penetration study and sign-off by a recognised process authority. Come-up and cool-down contributions are ignored here.

## Content

**Intro:** F0 expresses sterilization as equivalent minutes at 121.1 C for a microorganism with a z-value of 10 C. This calculator turns a hold temperature and time into F0 and tells you whether you cleared your required lethality.

**Sections:**

#### How to use the calculator

**Body:** Enter the temperature measured at the cold spot of the slowest-heating container, the minutes held at that temperature, the z-value, and the F0 your process authority requires. The tool returns the lethal rate, the delivered F0, the margin over the requirement and the hold time that would exactly meet the requirement. The chart sweeps temperature so you can see how a degree of temperature drift moves F0.

**Bullets:**

- Use cold-spot data, not the retort sensor
- Keep z-value at 10 C for botulinum unless told otherwise
- Required F0 comes from your validated schedule

#### The formula behind it

**Body:** The lethal rate is 10 raised to (T minus 121.1) divided by z. Multiply the rate by the minutes at that temperature to get F0. Because the relationship is exponential, an 11 C drop at z of 10 C cuts the lethal rate by a factor of roughly ten. That is why a short temperature deviation on a retort chart matters far more than the same deviation in time.

#### Worked example and common mistakes

**Body:** A cold spot held at 121.1 C for 12 minutes gives a rate of 1.0 and F0 of 12, a margin of 9 over a required F0 of 3. Drop the hold to 115 C and the rate falls to about 0.24, so 12 minutes delivers only about 2.9. Common mistakes are using retort temperature instead of product temperature, ignoring come-up lethality inconsistently, and applying this to acidified or high-acid products where pasteurization targets differ.

**Cta:** Want retort batch records and F0 deviations pulled straight from your MES or ERP? Netray can build that read-only view on your own data.

**Faq:**

#### What is a good F0 value?

**Answer:** It depends on product, container and the organism you are controlling. For low-acid canned foods a minimum botulinum cook is often quoted around 3 minutes, but commercial schedules are usually much higher to cover spoilage organisms. Your process authority sets the requirement.

#### Why use 121.1 C as the reference?

**Answer:** 121.1 C is 250 F, the traditional reference for steam sterilization. F0 is defined as equivalent minutes at that temperature for an organism with a z-value of 10 C, which makes schedules comparable.

#### Does this include heating and cooling lethality?

**Answer:** No. This is a single-point hold calculation. A full process calculation integrates the lethal rate across the entire time-temperature curve, for example with the general method, using logged cold-spot data.

#### Can I use this for pasteurization?

**Answer:** The same math works with a different reference temperature and z-value, but this tool fixes the reference at 121.1 C. For pasteurization use the log reduction calculator, which lets you set reference temperature and D-value.
